Two-group espresso machine from Victoria Arduino for high-volume cafés. Smart use of water and energy, and ergonomic steaming with steam-by-wire.

Smart water usage (NEO).
By heating only the water needed for the extraction, the Eagle One cuts its energy use without compromising on capacity or performance. The smaller water volume also means you have fresh water in the system most of the time, instead of water that has stood for hours in a large boiler. T.E.R.S. then recovers the heat in the waste water and uses it to pre-heat the incoming water.

Automatic flush (Autopurge).
After every shot the group flushes itself, rinsing coffee residue and oils off the shower screen. That means a cleaner extraction in the next cup and a more even taste through the day, without the barista having to flush by hand between shots.

Soft pressure ramp (0.5 mm restrictor).
The water into the group passes a 0.5 mm restrictor that limits the flow, so the pressure on the coffee builds more slowly and gently instead of hitting at full force. The coffee has time to saturate evenly before full pressure is on, and the water takes a more even path through the puck. The result is shots that come out more alike, cup after cup. It shows most on light roasts, which are sensitive to a hard start.
The café that wants Victoria Arduino's brewing technology in a machine that is frugal with both power and counter space. The specialty café that changes coffees often and wants to set temperature and pressure to the bean. The chain that wants the same settings in every location. The restaurant that wants a proper espresso bar on 76 cm of counter.
The temperature stays stable through the whole shot, and you choose it yourself, between 80 and 105 °C. Each group has two programmed doses and one manual button. Pump pressure is adjusted with a knob under the machine. 9 bar is the starting point, but if you want to brew light roasts at 6 bar, as more and more do, it is just a turn away.
Milk is half the job in a café, and this is where the machine has to keep up. The 7-litre steam boiler has its own 3 kW element, so the pressure holds as one pitcher follows the next. The lever controls the steam valve electronically, steam-by-wire, so it moves lightly and responds at once. Over a few hundred pitchers a day, your wrist notices the difference.
The weekly schedule and the standby mode work as a team. The schedule switches the machine off in the evening and on before you arrive, and in between, standby keeps the steam boiler under pressure so the morning warm-up is quick. Hot water has two programmed doses on one lever and runs while the groups are brewing. The display shows group temperature, shot time and boiler pressure. Cleaning can be run on one group at a time with the blind filter while the other keeps brewing.
